Spring Salad with Grapefruit, Celery, Avocado, Romaine and Surimi

If you like the sweet and refreshing bitter taste of grapefruit combined in a salad, you will probably love this recipe! This is probably one of our family's favorite, when we have grapefruits at home!



Ingredients:


2/3 cup of finely chopped celery.

2 cups of chopped Romaine lettuce.

6 ounces of natural surimi crab, chopped (you can also substitute the surimi with shrimps, if you prefer)

1 or 2 grapefruits (white or pink): cut in half, and then scoop out the segments with a grapefruit knife or a grapefruit spoon.

1 medium ripe avocado, chopped.

optional: chopped cilantro.


Dressing:

2 tablespoons of organic mayonnaise (making your own is even better of course!)

kosher salt


Instruction:

Easy: mix all together and serve! :)
