Soup of beet leaves, rainbow chards, green lentils and rice

There is nothing more easy to prepare than a soup! Full of fresh produce packed with nutrients, combined with lentils and rice giving a nice proteins addition ( the rice being a cereal, it helps in the absorption process of leguminous proteins) , this soup is a great and tasty meal for the whole family!

Ingredients:

1 chopped rainbow chard bunch

1 tablespoon olive oil

1 bunch of beet leaves

1/2 cup of cooked rice

1 chopped onion

3 table spoons of soy sauce

2 chopped garlic cloves

150g green lentils

Pepper to taste

35 fl-oz of filtered water

3 table spoons of heavy cream



Instructions:

1. Heat oil in large pan. Add the chopped onion on medium heat for 5 minutes.

2. Add the water, then the lentils and boil for 15 minutes.

3. Add the beet leaves, rainbow chards, cooked rice and cook for 5 more minutes.

5. Add the garlic, the cream and blend until completely smooth. Add pepper to taste.
