Fresh red chards and garlic make a nutritious and delicious side that can beautifully pair with fresh pasta.
We use parmesan in this recipe, but if you are vegetarian you can use an alternative easily.

Ingredients:
2 tbsp olive oil
1 spring garlic: keep the bulb and stem parts separate and slice them thinly.
1 bunch of red chards
1 tbsp Parmesan, freshly grated
salt and pepper
Instructions:
Add the oil to a large saucepan. Add the sliced garlic buld part and cook for a few minutes without browning.
Slice the rinsed red chards heads crossways into strips of about 1/2 inch. Add to the garlic, turning the heat up and stirring regularly for about 4-5 minutes until wilted.
Add the thinly sliced green garlic stem, stir in with the greens and cook for 1 minute. Finish by stirring in freshly grated Parmesan, salt and pepper.
Optional, if you want a more creamy dish: add 2 tbsp of heavy cream.
