Loquats upside down cake

I usually post savory, healthy recipes using the fresh vegetables you get delivered. But when I discovered the loquats (which I didn't know even after living for 5 years in SB) and after some research, I couldn't resist to post this mouth watering sweet recipe! To make it healthier or if you need to keep your blood sugar under

control, I would suggest to replace half of the regular sugar by Stevia or Xylitol, and the all purpose flour could be replaced by your favorite gluten free flour! Here is the recipe you can follow step by step. Enjoy!
