Liguine with Arugula, Gold Zucchinis and Spring Garlic


Ingredients (for 4 - 5 persons)


  • 1 lb of liguine (dry)

  • 2 - 3 medium-sized zucchinis

  • 5 spring garlic cloves

  • 1/2 bunch of arugula

  • 1/2 cup of olive oil

  • 1/3 of salt

  • Regular or vegan parmesan powder - look at our great vegan parmesan recipe!




Instructions

  1. Boil the linguine or one of your favorite pasta in a large a pan of water, with 1 tea spoon of salt. Drain and put aside.

  2. Rinse, drain and then chop the arugula. Set aside.

  3. Chop the garlic cloves thinly and set aside.

  4. Chop the zucchinis in little cubes and and cook them in a skillet with 3 table spoons of olive oil and 3 pinches of salt, on medium heat for 3 minutes. Add the chopped garlic in the skillet and continue to cook for 3 minutes.

  5. Boil the linguine or one of your favorite pasta in a large a pan of water, with 1 tea spoon of salt. Drain.

  6. Transfer the liguine back in the large pan and just before serving and combine with the cooked zucchinis and garlic, the arugula, 1 table spoon of parmesan powder and 2 extra table spoon of olive oil

  7. Top each plate with parmesan to taste and enjoy!
