
Lemon Cucumbers

While lemon cucumbers might look like mini gourds, these cuties are a fun way to brighten up any salad! Legend has it that they arrived here from Australia in the late 1800s. They get their name from their yellow skin and have a similar crunchy subtle flavor to other varieties of cucumber. They are best enjoyed fresh when the skins are bright yellow. The skin can be a thick texture, but is completely edible.
Slice them up to toss in salads, or enjoy on their own with a simple sprinkle of salt & pepper. You can also pickle 'em!
