Black Beans & Corn Salad

This week, we found a new inspiring and flavorful recipe that may give you (or your kids?) a new idea of what a salad can be: all vegan, yet nutritious and packed with proteins and a whole range of vitamins. Don't hesitate to substitute the red onion for a sweet yellow onion of your box. A tip, if you have little picky eaters at home: keep the ingredients separate in a bowl (like on the image).
