Avocado, Red Butter Lettuce and Lime Salad

Ingredients (4 servings):

- 2 large carrots (don't peel them! They are organic and the skin contains most of the minerals and vitamines), grated

- 1-2 avocado(s): chopped

- the leaves of a half red butter lettuce, chopped

- juice of 1 lime

- 1 table spoon of soy sauce

- 1 table spoon of olive oil

- 1 table spoon of balsamic vinegar

- 1 table spoon of grilled sunflower seeds

- any thinly chopped herbs you have at home: parsley, basil, cilantro, thyme, chives and any combination of them will work great in this salad!


Combine everything and serve...yummm!
